Sencha: Japan's Most Popular Green Tea. Sencha is the most commonly consumed green tea in Japan, known for its refreshing taste and vibrant green colour. Unlike Matcha, Sencha is steeped, not powdered, and its leaves are steamed after harvest to prevent oxidation, preserving its characteristic fresh, grassy, and sometimes oceanic flavour notes. It offers a perfect balance of umami, sweetness, and a pleasant astringency.

- Aroma: Freshly cut grass, steamed vegetables, and a distinct marine/seaweed note.
- Taste: A harmonious balance of savoury umami, natural sweetness, and a clean, refreshing finish with a gentle astringency. The infusion is a clear, bright yellowish-green.
- Appearance: Thin, needle-like, glossy dark green leaves.
- Origin: Shizuoka, Kagoshima, or Uji regions, Japan.

Brewing Guidelines
Use water at 160–175°F (70–80°C). For the first infusion, steep 1-2 teaspoons of leaves per 6oz (180ml) of water for 60 seconds. Subsequent infusions (2-3 more are possible) should be shorter (20-30 seconds) and with slightly hotter water. Avoid boiling water to prevent bitterness.
